Banana bread is one of my favourite things to bake, as it is so quick and simple, and I can also trick myself into thinking its healthy because it contains fruit. Perfect for a quick, filling snack or lunchbox filler, this banana bread recipe is perfect for any ability of baker to try out!
- 4 ripe bananas
- 200g plain flour
- 150g caster sugar
- 50g softened butter
- 1 teaspoon of bicarbonate of soda
- 1 egg
- Grease and line a loaf tin with baking paper using butter.Preheat the oven to around fan 160/ 180 oC/ gas mark 5.
- Mash the bananas using a fork in a large mixing bowl. Once mashed, add the remaining ingredients into the bowl and mix well (the mixture should be quite lumpy and thick).
- Bake for 40 minutes in the oven, then remove and leave to cool in the loaf tin to allow it to set. Once cool, remove from the tin and store in a cool, dry place for a few days.
